Clean a Blue Swimmer or Mudcrab

Twist out large nippers

Crack at the pincer end of each claw section with the back of a heavy knife.

Remove back shell by lifting the under flap and peeling back the top shell. Under cold running water clean away the gills and viscera.

Cut the body in half and then cut between the legs to the centre to expose the flesh.

Clean a Spanner Crab

Remove legs by twisting and pulling to keep the bone fibre intact. Use the back of a heavy knife to crack the claws.

Remove the back shell by lifting back flap, hold the body firmly and twist off the back shell.

Rinse the body under cold running water and remove the gills and viscera.

Lightly crush the body using downward pressure with the palm of the hand or a cutting board until the shell has cracked and can be pulled apart to expose the flesh.
